Healthy Cheesecakes? Whaaaaat??





Hello Internet Lovelies!

The other day I baked, and I know what you are thinking... you shouldn't be baking, you are meant to be eating healthy! Well my friends, I'll let you in on a little secret, and that is secret is: Vegan Cheesecake.
Now the thing I have struggled with most while being on this 90 day journey is the lack of cheesecake in my life. If you know me well, you will know it is my favourite food and I could probably eat it every day for the rest of my life, so yes it has been a struggle. But then I discovered this beautiful recipe and decided to re-create this beautiful, delicious, delightful desert and eat a lot of it!
My cousin came round last Saturday so it was the perfect opportunity to put the plan into action.

I will share the recipe with you, but it isnt mine, so I cant take any of the credit. Its bloody delicious though!!




So you will need: 

Base: 
- 1 Cup pitted dates, soaked in warm water for 10 mins then drained.
- 1 Cup of raw almonds
- 2 Tbsp of chia seeds
- Handful of oats

Filling:
- 1.5 cups of raw cashews soaked
- 1 Large lemon, juiced
1/3 cup of melted coconut oil
- 1/2 cup of coconut milk
- 1/2 cup of maple syrup






Drain dates and add to a blender or food processor and blend until smooth bits remain or forms a ball, then set aside. 




Next add nuts, chia and oats and process into a meal. 


Add meal with dates and mix until it forms a dough.


Next oil your cases with either spray or coconut oil. To make removing the cheesecakes easier cut strips of baking paper and lay them in the slots. 


I forgot a photo but scoop some dough into the tins and press down with fingers to make a base.

And failing. 


But black and white always makes it better right?



Add all of the filling ingredients into the blender and blend until very smooth.





It should turn out like this. 


Pour in on top of the bases. 


Next I made a berry coulis - while you are meant to do it on the stove I was too lazy so blended frozen berries, water and coconut sugar together to form a sweet but tangy coulis. 


Next swirl in a way that look pretty. The nice ones are mine, my cousin did the ugly ones (; (;

Mmmmmmmmm, I wish I could eat them now. 


But nope, freeze them in the freezer for at least 3 hours (I know its so hard to wait) 





Then you can enjoy, and oh you will enjoy! seriously delicious! You may also want to put peanut butter, caramel or banana on top, which I will definitely be doing next time!



I had so much fun making these cheesecakes, and had even more fun eating them! Not all of them, of course!
